Ingredients
Scale
1 lb dried white beans, rinsed and drained
6 cups vegetable broth
1 cup diced carrots
1 cup diced celery
1 medium onion, diced
4 cloves garlic, minced
4 oz turkey bacon, chopped
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper to taste
Instructions
Rinse the white beans under cold water until all the dust and debris are gone. Drain them well, and they’re ready for action!
Transfer the rinsed beans into your slow cooker. This is the base of your soup and where all the magic begins.
Pour in 6 cups of vegetable broth over the beans. The broth will lend incredible flavor and provide the perfect simmering liquid for your soup.
Add the diced carrots, celery, onion, and minced garlic to the slow cooker. These veggies will contribute a hearty texture and vibrant freshness to your soup.
Sprinkle in the chopped turkey bacon, which will introduce a delightful smoky depth.
Add the dried thyme, rosemary, bay leaf, salt, and pepper. Give everything a gentle stir to mix those spices and herbs throughout.
Cover your slow cooker and set it to cook on low for 8 hours or high for 4 hours. Let your kitchen fill with an irresistible scent!
Once cooked, carefully remove the bay leaf before serving. Taste and adjust the seasoning if needed, then serve warm to your eager diners.
Notes
For a vegetarian version, skip the turkey bacon or replace it with regular bacon for different flavor profiles.
