Delightful ice cream sandwiches made with fudgy homemade brownies, perfect for summer treats.

Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 pint of your favorite ice cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Mix together the cocoa powder, granulated sugar, brown sugar, and melted butter.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour and salt in another bowl. Gradually add the dry ingredients to the wet mixture.
  5. Pour the brownie batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
  7. Cool the brownies completely in the pan.
  8. Slice the brownies into squares. Scoop the chosen ice cream onto one square, and top it with another square.
  9. Serve immediately or freeze for later enjoyment.
