  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1/4 cup pineapple juice
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/2 teaspoon ground black pepper
  • 4 chicken breasts

Instructions

  1. Combine your marinade: In a medium-sized bowl, combine the soy sauce, ketchup, brown sugar, honey, rice vinegar, pineapple juice, and sesame oil. Whisk until smooth.
  2. Infuse flavor with garlic and ginger: Add the minced garlic, grated ginger, and ground black pepper to the bowl and whisk again.
  3. Marinate the chicken: Place the chicken breasts in a shallow dish or bag. Pour the marinade over them, ensuring they are coated. Refrigerate for at least 30 minutes or up to 4 hours.
  4. Preheat the grill: Heat your grill or grill pan to medium-high.
  5. Grill the chicken: Remove the chicken from the marinade, reserving the marinade, and grill for 6-7 minutes per side or until cooked through.
  6. Simmer the marinade: In a saucepan, bring the reserved marinade to a simmer over medium heat for about 5 minutes.
  7. Rest and brush the chicken: Let the chicken rest for a few minutes. Brush it with the thickened marinade before serving.
  8. Serve and enjoy: Serve hot, garnished with green onions or sesame seeds if desired.

Notes

For best flavor, marinate the chicken for at least 2 hours. You can also bake at 400°F if grilling is not an option.
