Deliciously crunchy pickled potatoes with a tangy flavor profile perfect for snacks or sides.

Ingredients

  • 1 lb baby potatoes
  • 1 cup vinegar (white or apple cider)
  • 1 cup water
  • 3 cloves garlic, minced
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Wash the potatoes thoroughly under running water.
  2. Boil the potatoes in salted water until tender, about 15-20 minutes.
  3. Prepare the pickling brine by combining vinegar, water, garlic, dill, salt, sugar, peppercorns, and optional red pepper flakes in a saucepan and bringing to a gentle boil.
  4. Combine the cooled potatoes with the brine in a clean jar.
  5. Seal the jar tightly and refrigerate. Let marinate for at least 24 hours for best flavor.

Notes

Store in the refrigerator for up to 2-3 weeks. Flavors improve over time.
