Delicious and fluffy cupcakes made with ripe peaches and topped with a rich cream cheese frosting and honey drizzle.

Ingredients

  • 2 ripe peaches, diced
  • 1/4 cup honey
  • 8 oz cream cheese, softened
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  3. Fold in the flour and diced peaches until just combined.
  4. Spoon the batter into a lined cupcake tin, filling each cup about two-thirds full and bake for 18-20 minutes.
  5. Beat the cream cheese until smooth, then gradually add powdered sugar and mix in the honey.
  6. Frost each cooled cupcake with the cream cheese frosting and top with a slice of peach or a drizzle of honey.

Notes

Use ripe peaches for the best flavor; you can also experiment with other fruits.
