A flavorful stack of marinated chicken, creamy avocado, and zesty rice, making for a vibrant and satisfying meal.

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for cooking)
  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander, chopped
  • 2 ripe avocados, sliced

Instructions

  1. Combine honey, lime juice, lime zest, garlic, and salt and pepper in a mixing bowl. Add the chicken and coat with marinade.
  2. Heat oil in a skillet over medium-high heat, cook chicken for 6-7 minutes on each side until golden. Pour reserved marinade over last minutes of cooking.
  3. Mix cooked rice with coriander, 1 tablespoon lime juice, salt, and pepper in a separate bowl.
  4. Slice avocados and sprinkle with lime juice, salt, and pepper.
  5. Layer rice mixture, chicken, and avocado in a stack, repeating layers as desired. Finish with coriander.

Notes

For best results, marinate chicken for at least 15 minutes. Use fresh ingredients for optimal flavor.
