1 lb boneless skinless chicken breasts
¼ cup honey
2 tablespoons fresh lime juice
1 teaspoon lime zest
2 cloves garlic, minced
Salt (to taste)
Pepper (to taste)

1 cup cooked rice (white or brown)
¼ cup fresh coriander, chopped
2 ripe avocados, sliced
Instructions
Combine honey, lime juice, lime zest, garlic, and salt and pepper in a mixing bowl. Add the chicken and coat with marinade.
Heat oil in a skillet over medium-high heat, cook chicken for 6-7 minutes on each side until golden. Pour reserved marinade over last minutes of cooking.
Mix cooked rice with coriander, 1 tablespoon lime juice, salt, and pepper in a separate bowl.
Slice avocados and sprinkle with lime juice, salt, and pepper.
Layer rice mixture, chicken, and avocado in a stack, repeating layers as desired. Finish with coriander.
