Instructions
Marinate the Chicken: Whisk together olive oil, lime juice, lime zest, honey, minced garlic, cumin, smoked paprika, chili powder, salt, and black pepper. Coat the chicken and refrigerate for at least 30 minutes.
Cook the Rice: Rinse the rice, combine with water or broth, olive oil or butter, and salt in a saucepan. Bring to a boil, then cover and simmer for 12-15 minutes.
Prepare the Avocado Mix: Combine diced avocados, lime juice, red onion, and cilantro in a bowl. Season with salt and pepper.
