  • 1 cup brown rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the brown rice in chicken broth according to package instructions.
  2. Heat olive oil in a skillet over medium heat.
  3. Add the diced chicken, seasoning with salt and pepper.
  4. Stir in the BBQ sauce until the chicken is well coated.
  5. Mix in the chopped bell peppers and broccoli florets until tender.
  6. Serve the mixture over the cooked brown rice.

Notes

Feel free to swap chicken for tofu for a vegetarian version. Store leftovers in the fridge for up to 3 days.
