Ingredients

  • 1 lb ground turkey or lean beef
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Brown the meat in a large pot over medium heat until it’s no longer pink.
  2. Sauté the chopped onions and minced garlic until they soften.
  3. Stir in the chopped bell peppers, chili powder, cumin, salt, and pepper.
  4. Combine the rinsed black beans, diced tomatoes, and broth into the pot.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  6. Serve hot, topped with your favorite garnishes if desired.

Notes

Leftover chili can be stored in an airtight container in the refrigerator for up to 4 days or frozen for 3 months.
