  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Sear the chicken breasts, seasoned with salt and pepper, for about 5-7 minutes on each side until golden brown.
  4. Add the halved baby potatoes and cook for an additional 3-4 minutes.
  5. Create the creamy mixture by mixing heavy cream, parmesan, and minced garlic in a bowl.
  6. Pour the creamy mixture over the chicken and potatoes in the skillet.
  7. Bake for 25-30 minutes until the chicken is cooked through and the sauce is bubbly and golden.
  8. Garnish with fresh parsley and serve.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat gently on the stove or in the oven, adding a splash of cream if necessary.
