  • 1 cup (240 ml) small curd cottage cheese
  • 2 large egg whites
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 large flatbreads or wraps (whole wheat or gluten-free)
  • Fresh veggies (optional): spinach, sliced cucumbers, or tomatoes
  • 1/4 cup yogurt or hummus (optional)

Instructions

  1. Slice the chicken breast thinly and season with salt, pepper, garlic powder, and paprika.
  2. Whisk together the egg whites in a bowl. Gently fold in the cottage cheese until well distributed but still slightly lumpy.
  3. Dip each chicken slice into the cottage cheese mixture, ensuring full coating. If the mixture is too thick, add a splash of milk to loosen it.
  4. Heat a skillet over medium heat and add olive oil. Once shimmering, add the coated chicken slices and fry for 3-4 minutes per side until golden brown and cooked through. Adjust heat as needed to avoid burning.
  5. Warm the flatbreads in a dry pan or microwave for about 20 seconds to make them pliable.
  6. Spread a little Greek yogurt or hummus on each flatbread, layer with crispy chicken, and add fresh veggies like spinach or cucumber slices.
  7. Roll up the wraps snugly, slice in half if desired, and serve immediately while warm and crispy.

Notes
