  • 2 cups cooked shredded chicken breast
  • 1/2 cup buffalo sauce (mild or hot)
  • 1/4 cup plain Greek yogurt
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 4 low-calorie whole wheat tortillas
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt & pepper to taste
  • Shredded lettuce (optional)
  • Chopped tomatoes (optional)
  • Avocado slices (optional)
  • Light ranch dressing (optional)

Instructions

  1. Shred the cooked chicken breast and place it in a large bowl.
  2. Mix the buffalo sauce and Greek yogurt together until creamy in a separate bowl.
  3. Pour the buffalo mixture over the shredded chicken, and mix thoroughly.
  4. Warm tortillas in the microwave for 15-20 seconds.
  5. Spoon the buffalo chicken filling onto each tortilla and sprinkle with shredded cheese.
  6. Fold the sides of each tortilla inward and roll tightly from the bottom up.
  7. Grill seam-side down in a non-stick skillet for 1-2 minutes until golden brown, if desired.
  8. Serve immediately while hot with optional toppings or light ranch dressing.

Notes

For a crispy finish, grill the burritos. You can also customize with various toppings.
