High Protein Banana Bread

Deliciously moist and nutritious banana bread, perfect for breakfast or a snack.

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Add the eggs, Greek yogurt, honey, and vanilla extract to the bananas and mix well.
  4. Combine the whole wheat flour, protein powder, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture, mixing gently until just combined.
  6. Fold in the chopped walnuts if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For best results, use very ripe bananas for maximum sweetness. You can add a dash of cinnamon for extra flavor.
