Hearty Southern Style Chicken Stew

A comforting chicken stew filled with tender chicken, fresh vegetables, and aromatic spices that brings the warmth of Southern hospitality to your table.

Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 potatoes, diced

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chicken thighs to the pot and cook until browned, about 5 minutes per side. Remove and set aside.
  3. Sauté onion, carrots, and celery in the same pot for 5 minutes until they soften.
  4. Add minced garlic and cook for 1 minute, allowing its fragrance to fill the pot.
  5. Pour in the chicken broth and add thyme, paprika, salt, and pepper. Bring to a boil.
  6. Return the browned chicken to the pot, reduce heat, and let it simmer for 20 minutes.
  7. Stir in the diced potatoes and frozen peas, cooking for another 10 minutes or until the potatoes are tender.
  8. Remove the chicken from the pot, shred it, and return it to the stew before serving.

Notes

Pairs well with crusty bread or cornbread. Can store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
