A comforting, nourishing lentil stew filled with vibrant vegetables and flavorful spices.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the chopped onion, carrots, and celery, and sauté until softened, about 5 minutes.
  3. Stir in the garlic, cumin, and paprika, and cook for another minute until fragrant.
  4. Add the lentils, vegetable broth, and canned tomatoes. Bring to a boil.
  5. Reduce the heat and let it simmer for about 30-40 minutes, or until lentils are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

Pairs well with crusty bread or a side salad. Can be stored in an airtight container in the refrigerator for up to 5 days.
