A comforting and flavorful Cajun-inspired white chicken chili perfect for cozy gatherings.

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 cans white beans (cannellini), drained and rinsed
  • 3 cups chicken broth
  • 1 can diced tomatoes with green chilies
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish

Instructions

  1. Sauté the vegetables in olive oil until soft.
  2. Introduce the minced garlic and cook until fragrant.
  3. Brown the chicken breasts on all sides.
  4. Pour in the chicken broth, diced tomatoes, and white beans.
  5. Season with Cajun seasoning, cumin, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat to simmer for 30 minutes.
  7. Shred the chicken and return it to the pot.
  8. Cook for an additional 10 minutes.
  9. Garnish with chopped green onions and cilantro before serving.

Notes

Pairs well with cornbread or tortilla chips. Can be stored in the fridge for up to 4 days or frozen for 3 months.
