A comforting and hearty black bean soup infused with garlic and onion, perfect for warming up on a cool evening.

Ingredients

  • 2 cups black beans, soaked overnight
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until soft.
  3. Drain soaked black beans and add them to the pot.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, add cumin, paprika, salt, and pepper. Simmer for 30 minutes until beans are tender.
  6. Blend half the soup for a thicker texture if desired.
  7. Stir in lime juice and chopped cilantro before serving.

Serve garnished with fresh cilantro, avocado slices, or sour cream and pair with crusty bread or a side salad.
