Guilt-free brownies made from wholesome ingredients like sweet potatoes and almond butter, rich in flavor and nostalgia.

  • 2 medium sweet potatoes
  • 1 cup almond butter
  • 1/2 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Cook the sweet potatoes until soft, either by baking or steaming. Peel once cool.
  3. Mash the sweet potatoes in a large bowl until smooth.
  4. Add almond butter, cocoa powder, honey or maple syrup, vanilla extract, baking soda, and salt. Stir until combined.
  5. Fold in chocolate chips gently.
  6. Spread the mixture into the prepared baking pan.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Cool completely in the pan before cutting into squares.

Notes

These brownies are gluten-free and can be made vegan by using maple syrup instead of honey.
