Ingredients

  • 1 cup oats
  • 1/2 cup assorted nuts (e.g., almonds, walnuts, cashews)
  • 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
  • 1/2 cup dried fruits (e.g., raisins, cranberries, apricots)
  • 1/4 cup nut butter (e.g., almond butter, peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the oats, nuts, seeds, and dried fruits in a large bowl.
  3. Mix together the nut butter, honey or maple syrup, vanilla extract, and salt in a separate bowl until smooth.
  4. Pour the wet ingredients over the dry ingredients and stir until well combined.
  5. Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
  6. Bake for 10-12 minutes or until lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store leftover cookies in an airtight container for up to a week or freeze for up to three months.
