A wholesome and hearty casserole that replaces traditional grains with cauliflower rice, blending flavor and health effortlessly.

  • 1 pound chicken breast
  • 4 cups cauliflower rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-fat Greek yogurt
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Cut the chicken breast into bite-sized pieces and season generously with salt, pepper, dried oregano, and paprika.
  3. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken pieces and cook until golden brown, about 5–7 minutes.
  4. Add the chopped onion and minced garlic to the skillet and sauté until fragrant, about 2–3 minutes.
  5. Stir in the cauliflower rice and cook for an additional 3–4 minutes until slightly tender.
  6. Remove the skillet from heat and stir in Greek yogurt, half of the shredded cheddar, and all the Parmesan cheese until well combined.
  7. Transfer the mixture to a lightly greased 9×13-inch baking dish and sprinkle the remaining cheddar cheese on top.
  8. Bake in the preheated oven for 15–20 minutes or until the cheese is melted and bubbly.
  9. Let the casserole rest for about 5 minutes and garnish with freshly chopped parsley before serving.

Notes

Pairs well with a fresh side salad or steamed vegetables. Can be made ahead of time and stored in the fridge.
