  • 1 whole chicken (about 3 lbs)
  • 8 cups water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf

Instructions

  1. Prepare the chicken: Place chicken in a large pot with 8 cups of water. Bring to a boil.
  2. Add the vegetables: Add the chopped carrots, celery, diced onion, minced garlic, salt, pepper, thyme, and bay leaf to the pot.
  3. Simmer for flavor: Reduce heat and let the mixture simmer for 60 minutes.
  4. Shred the chicken: Remove the chicken from the pot and let it cool slightly, then shred the meat into bite-sized pieces and return it to the pot.
  5. Final touch: Discard the bones and the bay leaf. Stir the soup one last time and serve it hot.
