A heartwarming chicken broth that is deliciously rich and full of nutrients, perfect for soothing comfort on rainy days.

Ingredients

  • 1 whole chicken (34 lbs), cut into pieces
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 cups water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Place chicken pieces in a large pot. Add the water and bring to a boil.
  2. Skim off any foam from the surface, then add the carrots, celery, onion, garlic, salt, pepper, and bay leaves. Reduce heat and let it simmer for 60 minutes.
  3. Remove the chicken pieces and shred the meat. Return the shredded chicken to the pot, discarding the bay leaves. Stir in the fresh parsley just before serving.

Notes

This soup is versatile; feel free to add your favorite veggies or grains. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
