A soft and fluffy Hawaiian Guava Cake that captures the essence of island life with vibrant flavors of guava and coconut.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 cup guava puree
  • 1 cup coconut milk
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the guava puree and coconut milk.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow to cool in the pan, then dust with powdered sugar.
