A comforting yet nutritious ground turkey and zucchini casserole that’s perfect for busy weeknights.

  • 2 zucchinis, sliced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 14 oz diced tomatoes (canned is fine)
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Sauté the Aromatics: In a large skillet, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic; let them cook for about 3-4 minutes.
  3. Cook the Ground Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula while cooking for about 5-7 minutes until browned.
  4. Mix in the Tomatoes: Pour in the diced tomatoes, stirring everything together and letting it simmer for another 2-3 minutes.
  5. Layer the Ingredients: In a baking dish, layer half of the zucchini slices at the bottom, followed by the turkey mixture, then add the remaining zucchini on top.
  6. Top with Cheese: Sprinkle the shredded mozzarella cheese generously over the top.
  7. Bake to Perfection: Place the baking dish in your preheated oven and bake for 30-35 minutes, until the cheese is melty and golden.

Notes

For a low-carb version, swap zucchini with thinly sliced eggplant. Customize herbs for added flavor.
