A comforting Ground Turkey Zucchini Casserole featuring layers of turkey, zucchini, and gooey mozzarella cheese, perfect for weeknight dinners.

  • 1 lb ground turkey
  • 2 zucchinis
  • 1/2 cup onion
  • 2 cloves garlic
  • 14 oz diced tomatoes
  • 1 cup mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté onion and garlic in a large pan over medium heat with olive oil until translucent, about 3-4 minutes.
  3. Cook the ground turkey until browned and cooked through, about 5-7 minutes.
  4. Incorporate diced tomatoes and your choice of seasonings, then simmer for 5 minutes.
  5. Layer half of the turkey mixture in a baking dish, add sliced zucchini and mozzarella, then repeat the layers.
  6. Bake for 30-35 minutes until cheese is bubbly and golden.
