A vibrant and nutritious wrap filled with grilled zucchini, feta, and chickpeas, perfect for summer evenings.

Ingredients

  • 2 large zucchinis, sliced
  • 1 cup feta cheese, crumbled
  • 1 can chickpeas, drained and rinsed
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Whole wheat or spinach wraps
  • Fresh spinach or mixed greens (optional)

Instructions

  1. Preheat the Grill to medium-high heat.
  2. Toss the sliced zucchini, bell pepper, and red onion with olive oil, smoked paprika, salt, and pepper.
  3. Grill the seasoned vegetables for about 4-5 minutes on each side until tender and slightly charred.
  4. Combine the grilled veggies with the drained chickpeas and crumbled feta in a large bowl.
  5. Lay out your wraps and fill each one with the chickpea and vegetable mixture.
  6. Add fresh spinach or mixed greens on top if desired.
  7. Roll each wrap tightly, tucking in the ends to secure the filling.

Notes

Store leftover filling in an airtight container for up to 3 days. Assemble wraps fresh before serving.
