A vibrant and flavorful appetizer featuring grilled baguette topped with juicy cherry tomatoes and fresh basil, drizzled with garlic-infused olive oil.

Ingredients

  • 1 loaf baguette
  • 4 cloves garlic
  • 4 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 200 g cherry tomatoes
  • 2 tbsp fresh basil leaves, chopped
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Preheat your grill or grill pan to medium-high heat, setting the stage for that delicious charred flavor.
  2. Slice the baguette on a diagonal into 1/2-inch thick pieces.
  3. Whisk together minced garlic, olive oil, balsamic vinegar, sea salt, and black pepper in a small bowl.
  4. Brush both sides of each bread slice with half of the garlic-oil mixture.
  5. Grill the slices for 1-2 minutes per side until golden grill marks appear.
  6. Prepare the cherry tomatoes by halving them and tossing with the remaining garlic-oil mixture and chopped basil.
  7. Remove the bread from the grill and rub each slice with a garlic clove for extra flavor.
  8. Top each grilled slice with a spoonful of the tomato and basil mixture, then serve warm.

Notes

Store grilled bread separately from the tomato mixture to maintain crispiness. Best enjoyed fresh.
