A vibrant and delicious grilled chicken salad loaded with fresh greens, cherry tomatoes, feta cheese, and a zesty balsamic vinaigrette.

Ingredients

  • 2 boneless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and pepper.
  2. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest.
  3. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and red onion.
  4. Slice the grilled chicken and add it to the salad.
  5. Sprinkle the feta cheese on top and drizzle with balsamic vinaigrette. Toss to combine and serve.

Notes

Best served fresh, but chicken and salad can be stored separately for a few days.
