Breakfast Grilled Cheese with Scrambled Eggs and Bacon

A cozy combination of scrambled eggs, crispy bacon, and gooey melted cheese, all hugged by perfectly toasted sourdough bread.

Ingredients

  • 4 slices sourdough bread
  • 4 large eggs
  • 1 cup cheese (your choice)
  • 4 slices bacon
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet until crispy, then set aside.
  2. Scramble the eggs in the same skillet with salt and pepper to taste.
  3. Butter one side of each slice of sourdough bread.
  4. Place one slice of bread, butter-side down, in the skillet and add a layer of cheese.
  5. Top with scrambled eggs and crispy bacon, then add another layer of cheese.
  6. Place the second slice of bread on top, butter-side up.
  7. Cook on medium heat until bottom is golden brown, then flip and cook until cheese is melted.
  8. Slice and serve warm.

Notes

For extra crispy bread, pop it in the toaster before assembling. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
