A warm and comforting stew packed with protein-rich green lentils and vibrant vegetables, perfect for autumn.

Ingredients

  • 1 cup green lentils
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the oil in a pot over medium heat.
  2. Add the onion, garlic, carrots, and celery; cook until softened.
  3. Stir in the green lentils, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 25 minutes or until lentils are tender.
  5. Taste and adjust seasoning as needed.
  6. Serve warm, over rice or with crusty bread.

Notes

For a thicker stew, mash a portion of the lentils and stir back in. Variations include adding different spices or greens for added flavor and nutrition.
