Delicious roasted eggplant infused with garlic, olive oil, and oregano, celebrating Greek flavors.

Ingredients

  • 2 medium eggplants
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and score the flesh in a crisscross pattern.
  3. Brush each half with olive oil and season with salt, black pepper, oregano, and garlic.
  4. Place the eggplants cut-side down on a baking sheet and roast for 25-30 minutes.
  5. Remove from the oven, drizzle with lemon juice, and garnish with parsley before serving.
