  • 2 boneless, skinless chicken breasts
  • 1 cup cooked rice or quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 bell pepper, chopped
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine the olive oil, minced garlic, dried oregano, salt, and pepper. Add the chicken breasts, coating them well with the marinade. Allow this to marinate for at least 30 minutes.
  2. Grill the Chicken: Preheat your grill to medium-high heat. Add the marinated chicken, cooking for 6-7 minutes on each side until cooked through. Let the chicken rest before slicing.
  3. Prepare the Tzatziki Sauce: In a bowl, mix together the Greek yogurt, diced cucumber, minced garlic, and a pinch of salt.
  4. Assemble the Bowls: Divide the cooked rice or quinoa among serving bowls. Top each with the sliced grilled chicken, cherry tomatoes, diced cucumber, red onion, and bell pepper.

Notes
