A flavorful bowl filled with juicy meatballs, crispy roasted potatoes, and a refreshing tzatziki sauce, capturing the essence of Greek cuisine.

Ingredients

  • 1 lb ground beef or lamb
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp fresh oregano, chopped
  • Salt and pepper to taste
  • 2 cups potatoes, diced
  • 2 tbsp olive oil
  • 1 cup yogurt
  • 1 cucumber, grated
  • 2 tbsp lemon juice
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine ground beef or lamb, breadcrumbs, egg, minced garlic, chopped parsley, chopped oregano, salt, and pepper in a bowl. Mix well and form into meatballs.
  3. Toss diced potatoes with olive oil, salt, and pepper in a baking dish. Spread them out and place the meatballs on top.
  4. Bake for 25-30 minutes until meatballs are cooked through and golden brown, and potatoes are crispy.
  5. Mix yogurt, grated cucumber, lemon juice, and salt in a bowl to prepare the tzatziki sauce.
  6. Serve the meatballs and potatoes in bowls, drizzling tzatziki sauce on top.

Notes

Leftovers can be stored in the refrigerator for up to 3 days. To maintain crisp texture, reheat in the oven.
