A delicious blend of Greek flavors, featuring savory meatballs, fresh veggies, and tangy tzatziki served over a bed of rice or quinoa.

Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes
  • 1/2 cup tzatziki sauce
  • Olive oil for drizzling

Instructions

  1. Mix the ground meat, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, and pepper in a large bowl and form into meatballs.
  2. Preheat your oven to 400°F (200°C). Place meatballs on a baking sheet and drizzle with olive oil. Bake for 20-25 minutes or until cooked through.
  3. Prepare the rice or quinoa according to package instructions while meatballs bake.
  4. Assemble the bowls with a serving of rice or quinoa at the bottom, then add cooked meatballs, cucumbers, and cherry tomatoes on top.
  5. Drizzle the tzatziki sauce over the top and enjoy!

Notes

For a lighter option, substitute ground turkey or chicken. You can also use lentils or chickpeas for a vegetarian version.
