Delicious cheesecake bars with a creamy filling enriched by Greek yogurt and sweet honey, topped with toasted pistachios.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/4 cup Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup pistachios, chopped and toasted
  • 2 tablespoons honey (for drizzling)

Instructions

  1. Preheat your oven to 350°F and line an 8×8-inch pan with parchment paper.
  2. Combine graham cracker crumbs, granulated sugar, and salt in a medium bowl.
  3. Stir in the melted butter until evenly moistened.
  4. Press the crust mixture into the bottom of the pan and bake for 8-10 minutes until golden brown.
  5. Reduce the oven temperature to 325°F.
  6. Beat the softened cream cheese until smooth in a large bowl.
  7. Add Greek yogurt, honey, eggs, vanilla extract, and lemon zest to the cream cheese and mix until smooth.
  8. Pour the cheesecake filling over the cooled crust and smooth it out.
  9. Bake for 25-30 minutes until edges are set but center jiggles slightly.
  10. Refrigerate the bars in the pan for at least 3 hours until firm.
  11. Drizzle with additional honey and sprinkle with chopped pistachios before cutting into squares.

Notes

Serve with whipped cream or vanilla ice cream, and store in an airtight container in the refrigerator for up to one week.
