A delightful blend of creamy cheesecake, floral honey, and crunchy pistachios, inspired by the flavors of Greece.

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1/2 cup sugar
  • 16 oz cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/3 cup honey
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios
  • 1/4 cup honey for drizzling
  • Extra pistachios for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Mix the graham cracker crumbs with the melted butter and 1/4 cup sugar until fully combined. Press into the bottom of the prepared pan.
  3. Beat the cream cheese until smooth and creamy.
  4. Add Greek yogurt, honey, and vanilla extract to the cream cheese and mix until well combined.
  5. Add the eggs one at a time, mixing on low speed after each addition.
  6. Fold in the chopped pistachios gently.
  7. Pour the cream cheese mixture over the crust and smooth the top with a spatula.
  8. Bake for about 30-35 minutes or until the center is set but still a bit jiggly.
  9. Cool to room temperature and then refrigerate for at least 4 hours.
  10. Drizzle with extra honey and top with additional pistachios before serving.

Notes

For best results, allow the cream cheese to soften to room temperature before mixing. Don’t skip the chilling time for proper setting.
