A refreshing and vibrant bowl featuring grilled chicken, fresh veggies, and creamy tzatziki, inspired by the flavors of Greece.

  • 4 Chicken breasts
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Lemon juice
  • 1 Cucumber, grated
  • 1 cup Plain yogurt
  • 2 tablespoons Dill, fresh
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 Tomatoes, diced
  • 1 Red onion, thinly sliced
  • 2 Bell peppers, diced
  • 1 cup Feta cheese, crumbled
  • 4 cups Lettuce, shredded

Instructions

  1. Marinate the chicken breasts in a mixture of olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill the chicken until cooked through, about 6-7 minutes per side.
  3. Prepare the tzatziki sauce by combining yogurt, cucumber, dill, salt, and pepper in a bowl.
  4. Assemble the bowls by layering grilled chicken over lettuce, then adding tomatoes, red onions, and bell peppers.
  5. Garnish each bowl with tzatziki and crumbled feta cheese before serving.

Notes

Leftovers can be stored in the fridge for up to three days. Keep tzatziki separate to maintain freshness.
