  • ½ cup finely diced sweet gherkins
  • ¼ cup finely diced red bell pepper

  • 2 large hard-boiled eggs, finely diced
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red wine vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper

  • â…› tsp crushed red pepper

Instructions

  1. Boil the macaroni in a pot of salted water until al dente, about 7-8 minutes, then drain and rinse.
  2. Prepare the vegetables and eggs by combining the chilled macaroni with diced gherkins, bell pepper, celery, onion, and eggs in a mixing bowl.
  3. Whisk together mayonnaise, sour cream, pickle juice, vinegar, sugar, mustard, and spices until smooth.
  4. Combine the dressing with the salad mixture, folding gently to coat.
  5. Chill for at least one hour in the refrigerator before serving.

Notes

Adjust creaminess by increasing mayonnaise or sour cream as desired. Store leftovers in an airtight container for up to 3 days.
