A delightful and lighter take on traditional meatloaf, packed with savory garlic and parmesan flavor.

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for topping)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking sheet with parchment paper or lightly grease a loaf pan.
  3. Mix 1 pound of ground chicken with 1 cup of breadcrumbs, 1/2 cup of grated Parmesan cheese, 1/2 cup of mozzarella cheese, 1/4 cup of chopped fresh parsley, 3 cloves of minced garlic, and 1/2 finely chopped onion in a large mixing bowl.
  4. Whisk together 2 large eggs, 1/4 cup of milk, 1 tablespoon of Worcestershire sauce, 1 teaspoon of Italian seasoning, 1 teaspoon of salt, and 1/2 teaspoon of black pepper in a separate bowl.
  5. Combine the egg mixture into the chicken mixture and mix gently until everything is combined.
  6. Shape the mixture into a loaf on the prepared baking sheet or in the loaf pan.
  7. Prepare the topping by mixing 1/4 cup of garlic powder and 1/4 cup of grated Parmesan cheese, then sprinkle over the meatloaf.
  8. Bake for 45-50 minutes until the internal temperature reaches 165°F (74°C).
  9. Rest the meatloaf for about 10 minutes after removing from the oven.
  10. Slice and serve with your favorite sides.

Notes

Allow the meatloaf to rest before slicing for optimal juiciness. Avoid overmixing to prevent density in your meatloaf.
