  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic whole and lightly crushed
  • 2 cloves garlic minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Bring the steak to room temperature by removing it from the refrigerator and letting it rest for 20 minutes.
  2. Season the steak generously with salt and pepper on both sides.
  3. Heat the skillet over medium-high heat until shimmering with olive oil.
  4. Sear the steak for about 3-4 minutes on each side for medium-rare.
  5. Create the garlic butter bath by adding unsalted butter and crushed garlic cloves to the skillet.
  6. Let the steak rest on a plate tented with foil.
  7. Make the Parmesan cream sauce by sautéing minced garlic in the same skillet for about 30 seconds.
  8. Incorporate the heavy cream and bring it to a gentle simmer.
  9. Whisk in the grated Parmesan cheese and Dijon mustard until smooth.
  10. Season the sauce with additional salt and pepper if needed.
  11. Slice the steak against the grain.
  12. Assemble by plating the steak, spooning the sauce over, and garnishing with parsley.
