A comforting and hearty Tex Mex dish featuring ground beef, cabbage, and topped with crunchy Fritos and cheddar cheese.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 small head of cabbage, chopped
  • 2 cups diced tomatoes (fresh or canned)
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 bag Fritos chips
  • 2 cups shredded cheddar cheese
  • 1 cup ranch dressing

Instructions

  1. Brown the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks. This should take about 5-7 minutes. Drain any excess fat.
  2. Add Taco Seasoning: Sprinkle the taco seasoning onto the beef and mix well, allowing to simmer with about 1/2 cup of water for an additional 5 minutes.
  3. Prepare the Vegetables: Chop the cabbage and dice the tomatoes for a fresh and crunchy texture in the dish.
  4. Mix the Ingredients Together: In a large mixing bowl, combine the cooked beef, chopped cabbage, diced tomatoes, black beans, and corn.
  5. Top with Fritos and Cheese: Transfer the mixture to a baking dish, topping generously with Fritos and cheddar cheese.
  6. Add Dressing Before Serving: Drizzle ranch dressing over the top just before serving.

Notes

For a healthier option, substitute ground beef with lean ground turkey or use Greek yogurt instead of ranch dressing.
