A delightful twist on classic French onion soup, these bite-sized morsels combine flaky puff pastry with savory caramelized onions and melty Gruyère cheese.

  • 1 pound onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1 cup grated Gruyère cheese
  • 1 package of puff pastry (thawed)
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions in a skillet with butter and olive oil over medium heat until caramelized, about 20-25 minutes.
  3. Simmer the mixture by adding beef broth, salt, and pepper to the caramelized onions. Simmer for another 5 minutes.
  4. Prepare the puff pastry by rolling it out on a floured surface and cutting it into 3×3 inch squares.
  5. Shape the pastry cups by placing the squares into a greased muffin tin and pressing down gently.
  6. Fill each pastry cup with the onion mixture and top generously with grated Gruyère cheese.
  7. Bake for 15-20 minutes, or until the pastry is golden and the cheese is bubbly.
  8. Cool slightly and garnish with fresh thyme before serving warm.

Notes

Caramelization is key for sweet, rich flavor. Feel free to swap in vegetable broth for a vegetarian option.
