French Onion Chicken Orzo Casserole

A comforting casserole that combines the rich flavors of French onion soup with tender chicken and orzo, topped with gooey Gruyère cheese.

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups beef broth
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 cup grated Gruyère cheese
  • 1 cup cream of mushroom soup
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the sliced onions in olive oil over medium heat until caramelized, about 10-15 minutes.
  3. Mix the diced chicken, orzo, beef broth, cream of mushroom soup, caramelized onions, salt, and pepper in a large bowl.
  4. Pour the mixture into a greased casserole dish and spread evenly.
  5. Cover with foil and bake for 25-30 minutes.
  6. Add the grated Gruyère cheese on top and bake uncovered for an additional 10-15 minutes.
  7. Garnish with fresh parsley before serving.

Notes

Pair with a fresh salad or steamed vegetables. Leftovers can be stored in an airtight container for up to 3 days.
