Delicious and protein-packed egg bites that are light, fluffy, and perfect for a nourishing breakfast.

Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh chives
  • 1/4 cup diced bell pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin with nonstick spray.
  3. Blend the eggs, cottage cheese, milk, salt, and pepper in a blender until smooth and frothy.
  4. Stir in the cheddar cheese, chives, and bell pepper. Mix gently.
  5. Divide the mixture evenly among 8 muffin cups, filling them 3/4 full.
  6. Bake for 16-18 minutes until puffed and set in the center.
  7. Cool slightly, run a knife around the edges, and serve warm.

Notes

Store in the fridge for up to 3 days or freeze for up to 2 months. Great for meal prep!
