A vibrant and comforting dish featuring crispy potatoes, seasoned ground beef, and fresh toppings, perfect for family gatherings.

  • 4 large potatoes, diced
  • 1 lb ground beef
  • 1 tablespoon taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream, for serving
  • Fresh cilantro, for garnish
  • Olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Spread the diced potatoes evenly on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes until crispy.
  2. Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Drain excess fat, then add taco seasoning, stirring well.
  3. Assemble the bowls by starting with roasted potatoes as the base. Layer with ground beef, black beans, corn, diced tomatoes, and a handful of shredded cheese.
  4. Top each bowl with diced avocado and a dollop of sour cream, finishing with fresh cilantro for garnish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep toppings separate until ready to enjoy.
