A healthier twist on classic fried rice, packed with vegetables and protein from egg whites, perfect for busy weeknights.

Ingredients

  • 2 cups cooked rice
  • 4 egg whites
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: cooked chicken or shrimp

Instructions

  1. Heat the sesame oil in a large skillet over medium heat until it shimmers.
  2. Add the mixed vegetables to the skillet and sauté for 3-4 minutes until tender.
  3. Push the vegetables to one side, pour in the egg whites, and scramble until cooked through.
  4. Add the cooked rice to the skillet and stir to combine.
  5. Pour in the soy sauce and mix well.
  6. Season with salt and pepper, and fold in the green onions.
  7. Serve hot in bowls and enjoy!

Notes

Using day-old rice helps avoid clumping. This dish is customizable with various vegetables and proteins.
