A refreshing and easy-to-make tuna pasta salad, perfect for summer picnics and gatherings.

Ingredients

  • 8 oz pasta (e.g., rotini or fusilli)
  • 1 can of tuna (drained)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 cup red onion (diced)
  • 1/2 cup olives (sliced)
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions for 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the veggies by mixing drained tuna, cherry tomatoes, cucumber, red onion, and olives in a large bowl.
  3. Mix the dressing by combining mayonnaise, Dijon mustard, salt, and pepper in a separate bowl.
  4. Combine the cooled pasta with the veggie mixture and pour the dressing over. Stir to coat.
  5. Garnish with parsley and serve chilled or at room temperature.

Notes

Great for picnics and potlucks; store leftovers in an airtight container for 3-4 days.
