  • 1 cup street corn (fresh or frozen)
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers invitingly.
  2. Add the diced chicken breast to the skillet and season with garlic powder, onion powder, salt, and pepper. Cook for about 7-10 minutes, stirring occasionally, until the chicken is browned and cooked through.
  3. Stir in the street corn and cook for an additional 3-5 minutes, allowing the corn to warm through.
  4. Spoon the chicken and corn mixture over a bed of cooked rice.
  5. Garnish with chopped cilantro and enjoy!
