Delightful muffins filled with cream cheese and fresh strawberries, perfect for breakfast or as a snack.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and chopped
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, and salt until combined.
  3. In another bowl, whisk the melted butter, milk, egg, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few flour streaks are perfectly fine.
  5. Gently fold in the chopped strawberries to the batter, ensuring not to crush them and lose their beautiful texture.
  6. In a small bowl, beat together the cream cheese and powdered sugar until smooth and creamy.
  7. Fill each muffin cup halfway with the batter, add a teaspoon of the cream cheese mixture in the center, and then top with more batter until the cups are about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Your kitchen will smell heavenly!
  9. Allow the muffins to cool slightly in the pan before transferring them to a wire rack. Enjoy your delicious muffins warm or at room temperature!
