A creamy and flavorful potato salad perfect for summer picnics and barbecues.

  • 2 pounds of potatoes
  • 1/2 cup mayonnaise
  • 1 tablespoon mustard
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped celery
  • Salt and pepper to taste
  • Chopped fresh herbs (optional)

Instructions

  1. Boil the Potatoes: Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes. Drain and set aside to cool.
  2. Peel and Chop the Potatoes: Once cooled, peel the potatoes and chop into bite-sized pieces.
  3. Combine the Ingredients: In a large bowl, mix the chopped potatoes with mayonnaise, mustard, onion, and celery.
  4. Mix well: Gently mix until each potato is coated with dressing. Season with salt and pepper to taste.
  5. Add Fresh Herbs: Incorporate chopped fresh herbs for added flavor.
  6. Chill and Serve: Cover and chill in the refrigerator for at least an hour before serving.

Notes

For extra richness, consider adding diced pickles or bacon bits. Leftovers can be stored in an airtight container for up to 3 days.
